素食其實不難,只要有心,任何年齡層都做得到。


  選擇素食的人口,在個人健康、動物生存權、道德、環保、宗教等議題愈來愈受普羅大眾關心下,近年來,逐漸的上升,年齡層也逐漸的下降。為了探究什麼原因讓年輕一代的青少年選擇吃素,蕃茄小屋的編輯群特別從2004年5月24日起在網路上,依年齡
(1)18歲以下的青少年
(2)18歲以上的年輕人或青壯年
的區分,做了一項英文的問卷調查。我們採用的方法是,將問卷貼在一些著名的素食論壇上,讓網友自由填寫,短短一個星期的時間,總共有來自美國、加拿大、英國、英格蘭與澳洲等國家,約40位的素食網友填寫了這份問卷。陸續我們將把這些問卷結果翻譯之後,登載在每一期的蕃茄小屋中,與大家分享。

  這份問卷目前雖然大部分還在翻譯當中,但初步可以發現:
1.素食其實不難,只要有心,任何年齡層都做得到。
2.素食也能吃的很健康。

  後續我們將再做比較詳細的分析與整理。在此我們先將代表性的幾個問卷結果刊登出來,與大家分享。


 

青少年組(一)

1.影響你素食的原因為何?
我出生之後就開始素食,但成為嚴格的素食者,是在一次學校帶領我們參觀一所乳牛場時才決定的。那次我發現到他們所介紹我們認識的資訊中,所從未談到的有關雄性小牛的事。我看到了小牛被關在很簡陋的茅棚內,而且當我著他們的眼睛時,……我看到他們害怕與痛苦的眼神。我無法不聯想到其他方面的事情。起初我是為了這些動物,而選擇成為嚴格的素食者,但接著我領悟到嚴格素食主義的力量-----素食是為了所有的人類、動物與環境。

2.素食年齡:出生之後就開始素食,嚴格的素食則有一年的時間。

3.素食難嗎?
我生來就素食,因此對我來說,素食並不難。但嚴格的素食,剛開始是有一些難,但現在我發現我喜歡嚴格的素食,而且決不會回頭。

4.那本書或那個人影響你成為素食者呢?
彼得.辛格的《合乎倫常的生活》(Writing on an ethical life),以及茱麗葉.葛拉蕾的《沉默的方舟》(The Silent Ark)。

5.那句話影響你成為素食者呢?
「暴力面前,眾生皆會顫抖。眾生都懼怕死亡,熱愛生命。從別人的身上我們看到自己。如此一來你會去傷害誰?你會做出什麼傷害的舉動?」∼佛陀

6.你如何獲得每天所需的蛋白質呢?
從豆類、堅果、豆腐。

7.請提供一份你每天一般會吃的食物計劃表
--早餐:輾碎的穀物、堅果與乾果等、豆奶。
--午餐:蘋果、香蕉、柳橙、自家做的無鹽全麥麵包以及鷹嘴豆芝麻沙拉醬。
--晚餐:炸豆腐拌蕎麥麵
--點心:水果/素巧克力

8.你覺得為什麼其他人也應該素食?
因為如果沒有人願意改變他的生活型態且相信因果,人們不會有所長進,律法不會改變,社會也不所有改變。如果人們能接受動物也會有痛苦的感覺,我們就應該將這個觀念帶進我們的每天生活當中,那麼這個世界將會是個更平安與和平的地方。

9.當你到非素食的餐館吃飯時,你是否有點菜的困難呢?如果是這樣,你怎麼辦?
我經常最後只是點帶皮的馬鈴薯(土豆)與豆類食品。或者,..怎麼說呢,沒有起司與其他東西的披薩。是蠻困難的,但我的朋友都很支持我,所以看到我這樣總是笑一笑。

10.你認為你的飲食均衡嗎?如果沒有,請說明。
絕對是均衡的,我相信嚴格的素食主義是這地球上最健康的飲食。

11.素食的利弊為何?
成為一般素食/嚴格素食的優點是,這是你個人最大的一個進展….這是每個人都可以做到的,----告訴周遭的人你對動物所受的苦感到痛絕。缺點是….沒有任何缺點耶!:D

12.任何建議?
我是一個已改頭換面的人…….我終生奉行嚴格的素食:D

1.影響你素食的原因為何?
我是在幫助我先生做學校的一份研究報告時,開始素食的。當時我們還未素食,但我們卻在那個時候發現肉食會對健康造成危害,以及畜養動物的環境所會對地球產生的侵蝕。於是為了家人的健康,我們決定素食。

3.素食難嗎?
一點不難。我們發現大部分的餐廳都非常貼心,而在家裡吃時,食物的選擇是無限的。素食之前,似乎所吃得東西都只侷限在雞、牛或魚。那真是令人厭煩的。

4.那本書或那個人影響你成為素食者呢?
在幫我先生做研究時,我讀了哈爾.萊門(Howard Lyman)所寫的「發瘋的牛仔」。這本書導引我走上正確的路。

5.那句話影響你成為素食者呢?
「除非你能夠擁抱並接納所有的生物,而不只是將愛心局限
於人類而已,不然你不算真正擁有憐憫之心。」∼史懷哲

6.你如何獲得每天所需的蛋白質呢?
從豆類、堅果、豆莢、綜合維他命補充品。

7.請提供一份你每天一般會吃的食物計劃表
--早餐:綜合水果、格蘭諾拉的穀片、加黃豆奶的咖啡
--午餐:烤馬鈴薯(土豆)、沙拉、水果切片、蘇打水
--晚餐:義大利蔬菜麵、大蒜麵包、蘋果派、豆奶
--點心:炸蕃茄片、椒鹽脆餅、烤的豆腐條、堅果、生菜

8.你覺得為什麼其他人也應該素食?
如果不是其他理由,…..,那麼為了你的健康。肉類食品會慢慢的破壞你的結腸,而且許多癌症皆與肉食有關聯。

9.當你到非素食的餐館吃飯時,你是否有點菜的困難呢?如果是這樣,你怎麼辦?
只有一次在菜單上找不到任何可以吃的,….我只點了一些小菜,結果湊成一盤非常棒的蔬菜組合。

我知道我吃的均衡,醫師同意我的吃法。

11.素食的利弊為何?
其中一個優點是….不用擔心因吃肉而感染過來的疾病,缺點之一是….逛商店找東西時都須讀所有的標示。

嚐試素食一個月看看。我們是這樣開始的。在發現素食讓我們覺得更舒服,且對我們更有益時,我們從未再回頭吃肉。試試看!

1. What influenced you to become vegetarian?

I've been vegetarian since birth, but decided to go vegan because i visited a dairy farm with my school and realised that the talks they gave us never told us about what happened to male calves. i saw the cows in their sheds briefly, and looked into their eyes...i saw fear and pain. something i could not be connected to anymore. i did it for the animals ultimately but then i realised the strength of veganism - it's for people, the animals and the enviroment.

2. How long have you been a vegetarian?

Veggie since birth, vegan for a year

3. Is it hard to be a vegetarian?

i've been brought up veggie so i never had a problem with that. vegan was a little tough at first, but now i love it and i could never go back.

4. What books or who gave you the inspiration of being a vegetarian?

"Writings on an ethical life" by Peter Singer, and "The Silent Ark" by Juliet Gellatley

5. Which quotes that inspired you to become a vegetarian?

"All beings tremble before violence. All fear death, all love life. See yourself in others. Then whom can you hurt? What harm can you do?" - Buddha

6. How do you get your protein everyday?

beans, nuts, tofu

7. Give a general meal plan of what you eat each day:

-Breakfast muesli and soya milk
-Lunch apple, banana, orange, homemade wholemeal bread (no salt!) and hummus
-Dinner stir fry with tofu and buckwheat/soba noodles
-Snacks fruit/vegan chocolate

8. Why should other people become vegetarians?

because without one person changing their lifestyle and believing in a cause, movements never grow, laws never change, and society never brings a change. if people could accept that suffering should extend to animals and we should evolve to incorporate this into our everyday lives, then the world would be a safer and more peaceful place.

9. When you go to non-vegetarian restaurants, do you find any difficulty ordering appropriate meals? If so, what do you do?

i often end up ordering jacket potato and beans. Or say a pizza...without the cheese etc. it's difficult but my friends are supportive so it's always a laugh

10. Do you think you are on a well balanced diet? If not, please explain why.

Absolutely. I believe veganism is the healthiest diet on the planet.

11. What are the pros and cons of being vegetarian?
pros of being veggie/vegan are that it is the biggest step you can take as an individual...that everyone can take, in order to tell the people around you that you are abhorred by animal suffering.
cons...they aren't any!!! :D

Helping my husband do a research paper for school. It was a topic that was given to him, we were not vegetarian at the time. We found out about health hazards of meat and conditions of farmed animals and the erosions of the land due to it. We decided for our family's health we should choose vegetarianism

3. Is it hard to be a vegetarian?
Not at all. We find that most restaurants are very accommodating and the choices of food at home are limitless. Before becoming vegetarian, it seemed like every meal was centered around chicken, beef, or fish. That gets boring


4. What books or who gave you the inspiration of being a vegetarian?
During the course of research I read "Mad Cowboy" by Howard Lyman. That set me in the right direction.

5. Which quotes that inspired you to become a vegetarian?

6. How do you get your protein everyday?
From beans, nuts, legumes, and multivitamin supplements

7. Give a general meal plan of what you eat each day:
-Breakfast..........mixed fruit smoothie, granola cereal, coffee with soy creamer
-Lunch...... baked potato, salad, piece of fruit, sparkling water
-Dinner.... Vegetable lasagna, garlic bread, apple pie, soymilk
-Snacks.....chips, pretzels, baked tofu sticks, nuts, raw veggies

8. Why should other people become vegetarians?
If for no other reason... your health. Meat slowly destroys your colon and it is linked to so many cancers

9. When you go to non-vegetarian restaurants, do you find any difficulty ordering appropriate meals? If so, what do you do?
[Only one time was there "nothing" on the menu as a Meal....I just ordered a bunch of "side dishes" and ended up with a very nice vegetable platter.

10. Do you think you are on a well balanced diet? If not, please explain why.
I know I am, my doctor agrees.

11. What are the pros and cons of being vegetarian?
a PRO would be... not worrying about getting diseases transmitted through eating animal and a CON would be... not being able to go in to any store and find what you need without reading every label.

12. Any comment?
Give it a try for one month. That's how we started. we just never went back when we found out how good it made us feel, and how good it was for us! Try it.
